It's really obvious on stuff like electric pianos (Rhodes, Whurly) played softly with the amp turned up, and not so much on acoustics, but Andy plays piano, so his ears expect to hear them & even without him necessarily knowing exactly what's wrong, tell him that something is. Those are super important, and when not there, things sound wrong. There's something called "release samples" - samples that are triggered when a key is released & dampers hit the string (to mute it). Hit C5 with, let's say, key velocity 66, and you'll hear one of the C5 samples from the layer that corresponds to that velocity (e.g. And that's why we have ginormous piano sample banks, with key velocity mapped not just to volume, but to velocity layers.
